What information is lost when you view only a piece of broken hologram?
Ultimately what you lose is resolution. If you cut the hologram in half the image becomes have the size. But suppose you then magnify the image to return it to its original size. And suppose you repeat that process of cutting and magnifying. Eventually the image would become pixelated or blurry.

If you cut a hologram in half, each piece still contains an image of the entire object. In contrast, if you cut a photograph in half, half of the information is lost. One way to copy a hologram is to illuminate it with a laser beam and place a new photographic plate such that it receives light from the hologram and from the original beam.

When a hologram is cut in half, the whole scene can still be seen in each piece. This is because, whereas each point in a photograph only represents light scattered from a single point in the scene, each point on a holographic recording includes information about light scattered from every point in the scene. Holography – Simple English Wikipedia, the free encyclopedia
When a photo is cut in half, each piece shows half of the photo. When a hologram is cut in half, the entire holograph is shown in each piece. This is because each piece of a photo shows only that part of the photo, but each point on a hologram shows light from all over.
