It takes roughly a week to ferment wine in a Keg and then another 56 days to take it from normal to Iridium quality and while the per unit profit is amazing with the Cask wine the looooooong downtime while waiting out the 56 days vs. making it in a Keg and selling it in greater volume. I’m almost inclined to believe it’s easier and better profit to sell Keg wine in volume then it is to age it …
